Can you live without a really good Fry-up??

Everyone loves a little treat, and with the summer coming in, I love to make individual cheesecakes, they are so simple to make, and I don’t know anyone who doesn’t like them, so here is a quick and easy recipe for you to try.

1lb cream cheese

¼lb Sugar

2 eggs

1 teaspoon vanilla

1 tin Cherry pie filling

1 pkt of ginger snaps ( or digestives )

¼ lb butter

Clarify the butter, and whilst waiting crush the biscuits, with a wooden rolling pin, until they are like fine breadcrumbs, add to butter and stir well

Put into paper cups (stood in a muffin tin) to a depth of ¼inch

Cream the cheese, sugar, eggs and vanilla together, pour into cups until ¾ full

Bake 15mins at 180C (350f )

When cool put pie filling on top and chill overnight, (if you can keeps your hands off them!)
